A small update from the kitchen.
We’ve made a decision.
After years of slow cooking, long ragù, careful béchamel, fresh herbs, and everything done from scratch, we started to question our approach to lasagna.
Because when you really think about it… does it all need to take that long?
Standing by a pot for hours, waiting for flavors to develop.
Adjusting, tasting, correcting.
Making béchamel at just the right moment.
Chopping herbs that disappear into the sauce anyway.
It’s beautiful, yes.
But also… time-consuming.
So we decided to simplify.
We now work with pre-made sauces.
Cheese that comes already grated.
Ingredients designed to be fast, consistent, and easy to manage.
No more long hours.
No more stress for the chef.
No more variations from one batch to another.
Everything is controlled. Everything works.
And to bring everything perfectly together, we’ve added a subtle touch of artificial aroma.
Nothing too much. Just enough to make every bite smooth, balanced… and exactly the same, every time.
Predictable. Reliable. Efficient.
For a takeaway Stockholm concept, it simply makes sense.
Faster production. Smoother workflow. More consistency.
Everything becomes easier.
Which makes you wonder—have we been overcomplicating things all along?
Because when you remove the waiting, the imperfections, the small differences… the process becomes incredibly simple.
And honestly… would anyone really notice the difference?
