Unox Ovens

Yesterday we visited the Unox Experience Center in Kista to test ovens for our upcoming lasagna-specialized takeaway in Stockholm. We were warmly welcomed by Tommy Nygård, who guided us through what became both a technological and culinary adventure.

Unox is an Italian company known worldwide for its professional ovens and smart cooking solutions. From fine dining restaurants to bakeries and now even our lasagna takeaway, Unox represents the same values we care about: quality, efficiency, and passion for food.

Walking into the center felt like stepping into a world where precision meets passion. Rows of ovens stood waiting, gleaming in stainless steel, ready to prove what they could do. We honestly felt a bit like kids arriving at Gröna Lund—except instead of rides, there were ovens. The excitement was just as real.

Among all the machines, one oven caught most of our attention: the Speed Pro, a clever combination of convection and microwave. For us, the challenge is simple but important—how can we serve lasagna quickly, while still keeping its soul intact? The Speed Pro seemed to offer part of the answer. It can cook lasagna at high temperatures in a very short time, while still preserving flavor, texture, and nutritional value. For a takeaway that is all about homemade quality, that’s not just technology—it’s a bridge between tradition and modern life.

Our first results were good. Actually, very good. The layers baked evenly, the top came out bubbling and golden, and the aromas filled the room in minutes. But for us, “good” is not enough. We are perfectionists when it comes to lasagna, and we know there are still details to refine: how the texture settles, how the layers hold after resting, and how each portion feels when served in the rhythm of a busy day.

That’s why this was just the beginning. We will be back for more testing, adjusting, and fine-tuning until every slice comes out exactly the way we want it: warm, generous, and full of character.

There is also another layer to this story: sustainability. Choosing the right oven isn’t only about speed and taste. It’s about efficiency, energy use, and waste reduction. A well-designed oven can help us cook smarter, save resources, and stay true to our values of responsibility toward both food and the environment. It might not be visible to the customer, but it’s deeply connected to how we want to run our kitchen.

Testing ovens might sound technical, but for us it’s also emotional. It’s part of the journey of building something new in Stockholm: the first lasagna takeaway, created with passion and care. Every detail matters—from the flour in the pasta dough to the oven that finishes the dish before it reaches your table.
