Our gluten-free dough is simple. Corn flour. Rice flour. Eggs. Salt. Xanthan. Nothing industrial. Nothing complicated. Just ingredients that behave differently and require a little more patience.

The way it holds the ragù and béchamel matters.
Gluten gives traditional pasta its stretch. Without it, you need balance. Too dry, it cracks. Too soft, it collapses. So we tested. Adjusted. Rolled it again. Cooked it again.
Craftsmanship doesn’t disappear when gluten does.
If anything, it becomes more important.
For many people, gluten-free is not a lifestyle choice. It’s a necessity. Celiac disease. Intolerance. Sensitivity. Eating out can feel stressful. Asking questions. Double-checking. Hoping it’s safe.
